Roasted Chili

  1. Toss beef with 1 tablespoon water, 3/4 teaspoon salt, and baking soda in bowl until thoroughly combined. Set aside for 20 minutes.
  2. Preheat oven to 275.
  3. Broil peppers, onion, and garlic until blackened (about 10-20 minutes).
  4. Peel and chop peppers. Toss the skins and seeds in chicken broth.
  5. Blend peppers, garlic, and broth.
  6. Over medium heat, heat oil until shimmering. Cook onion for a minute.
  7. Toss the ground beef into the pan and cook until browned (12-15 mins).
  8. Add in pepper mixture and allow to cook for a couple minutes.
  9. Add in tomatoes. Scrape up fond and add beans.
  10. Cover and put in oven for 1.5 to 2 hours.
  11. Add vinegar before serving.
