Roasted Chili
Ingredients
- 2 lbs Ground Beef
- 3/4 t Baking Soda
- 5 Poblano Chilies
- 4 Anaheim Peppers
- 1 Onion
- 8 cloves Garlic
- 1 can Chicken Broth
- 2 T Cumin
- 1 T Coriander
- 1 T Paprika
- 1 T Garlic Powder
- 2 t Oregano
- 1 can Crushed Tomatoes
- 1 can Diced Tomatoes
- 1 can Pinto Beans
- 1 T. Vinegar
Directions
- Toss beef with 1 tablespoon water, 3/4 teaspoon salt, and baking
soda in bowl until thoroughly combined. Set aside for 20 minutes.
- Preheat oven to 275.
- Broil peppers, onion, and garlic until blackened (about 10-20 minutes).
- Peel and chop peppers. Toss the skins and seeds in chicken broth.
- Blend peppers, garlic, and broth.
- Over medium heat, heat oil until shimmering. Cook onion for a minute.
- Toss the ground beef into the pan and cook until browned (12-15 mins).
- Add in pepper mixture and allow to cook for a couple minutes.
- Add in tomatoes. Scrape up fond and add beans.
- Cover and put in oven for 1.5 to 2 hours.
- Add vinegar before serving.
Notes for next time:
- Too thin
- Not enough chili taste (no chili powder)
- More Beans

- 1.5 - 2 cans Pinto Beans
- 1 T. Vinegar
Changes:
- Switched can of crushed tomatoes for diced
- Added Chili Powder and removed Garlic Powder and Paprika
- Added more Beans
